Soy beans were supposed to be hydrated til al dente, but were still pretty toothsome if you ask me. Fragrant and floral, dank and salty, like fries done in beef tallow the way God intended. Hella spicy but fortune favors the bold. Must really adore sichuan peppercorn flavor. Green onions added are my own.
